Everyone gives Champagne credit for inventing sparkling wine. The monks down in Limoux were writing it all down first, and this bottle is still made the old local way. It's the original, quietly getting on with it while somebody else takes the applause. I Say a Little Prayer by Dionne Warwick knows the feeling. Hers came first, and it's still the better one.
